Ingredients:
ROCKET, PEAR AND CANDIED WALNUT SALAD with balsamic vinaigrette
2 cups fresh rocket leaves
1 packham pear, de-cored and finely sliced
1 avocado, sliced
1/4 walnuts
1 Tbsp maple syrup
Preheat your oven to 200C and line a small baking tray with parchment paper. Place the walnuts on the tray and bake for 5 minutes. Remove from the oven and drizzle over the maple syrup. Bake for another 5 minutes until golden. Remove and set aside to cool before breaking into bite size pieces.
Place the rocket in a large bowl. Top with the avo and pear slices and the candied walnuts.
DRESSING
Juice of half an orange
1 Tbsp balsamic vinegar
1 Tbsp mustard
1 Tbsp olive oil
Salt and pepper to taste
