Kale Salad - Recipe

A quick and easy kale and caramalised onion salad that is served as a side or can be eaten on its own. It is plant based and super healthy.

Ingredients:

1 x Bunch Kale finely chopped
2 x Onions sliced
pinch of salt
10 ml honey
1 t mustard seed
1 t cumin seeds
1 t sesame seeds
pinch cayenne pepper
3 T Red wine vinegar or balsamic vinegar
3 T Olive Oil

Method

Put the chopped Kale into a dish.
Add a splash of olive oil and a few drops of vinegar and gently massage the kale to soften.

In a pan, add a splash of olive oil and saute the onions with the honey and salt until caramalised and soft.
Add the mustard, cumin, sesame seeds & cayenne pepper.
Stir until the spices have toasted and released their flavour.
Add the vinegar and olive oil and cook for 1 minute.
Add the warm mixture to the kale and toss through.
Serve as a side or enjoy as a salad.
