For those who love classic Italian flavours, this Toasted Italian Sandwich is the perfect lunch or picnic dish. It’s made with fresh Ciabatta bread. Then loaded with sweet Italian peppers and layers of prosciutto and salami. Don’t forget the fresh herbs, and finally, the mozzarella, melted to perfection.
Ingredients:
1 Tbsp Olive Oil
2 Large Italian Sweet Peppers Deseeded and quartered
1 tsp Dried Italian Herb Mix
Salt and Pepper to taste Optional
1 Ciabatta Loaf
80 grams Prosciutto
80 grams Salami
200 grams Mozzarella
60 grams Fresh Rocket
Fresh Basil Optional
Method
Deseed the peppers and quarter them lengthways
Place a large pan on medium low heat, add the olive oil, then the peppers and herbs. Season with salt and pepper if you wish. Place a lid on the pan and cook gently for around 5 to 10 minutes, until the peppers have softened. Turn the peppers over every few minutes
While the peppers are cooking, prepare the remainder of your ingredients. Slice the Ciabatta down the middle lengthways then slice the mozzarella
Assemble the sandwich by layering the ingredients. I started with the prosciutto, then salami, followed by the peppers, then the cheese and finally the herbs
Preheat your Panini/sandwich press (You could do grill the sandwich in a pan if you do not have a sandwich press, just take care when flipping it)
Place the top of the bread on then place the whole sandwich on the grill/press. Gently press it down and heat just for a few minutes until the mozzarella starts to melt
Tip: For an even top to your sandwich, rotate it after a few minutes
Remove, slice into as many portions as you wish and serve
Tip: If you're making this sandwich for a picnic or to add to a lunch box, use a cocktail skewer or toothpick to ensure it doesn't fall apart or wrap each portion in wax wrap
