Caprese potatoes are the perfect entertaining food or mid week supper. It's a Mediterranean classic for so many reasons.
Ingredients:
4 large potatoes
1 large tomato, finely diced
Handful of basil leaves, washed
3 Mozzerella sticks, torn
3 Tbsp Olive oil
Season with salt and freshly ground black pepper
Method:
Wash and prick the potatoes and place into the microwave to cook for 12-15 minutes or until cooked through completely.
Top with the fresh ingredients and drizzle with the olive oil, season and serve.
