Delightfully easy banana loaf. This especially useful when you have a few forgotten, overripe bananas o the kitchen counter. Kids will love this healthy treat and good luck with keeping them away from the raw mixture.
Ingredients:
125g Butter
150g Sugar
2 Farm Eggs, well beaten
5ml (1 teaspoon) Vanilla Extract
250g Flour
5ml (1 teaspoon) Bicarbonate of Soda
3ml (3/4 teaspoon) Salt
45ml (3 tablespoons) Soured milk (milk with a squeeze of lemon)
3 Large bananas, well mashed
Method:
Beat the butter & sugar together until smooth then gradually add the beaten eggs and the vanilla extract. Sieve together the flour, bicarbonate of soda and salt, and add the dry ingredients alternately with the milk and well- mashed banana.
Turn mixture into a greased loaf tin and bake for 1hour. A knife inserted into the loaf should come out clean.
VARIATION: Add 125ml (½ cup) chopped walnuts to the mixture.
