Honey crystallizes because of its natural sugars (glucose and fructose) forming crystals, which makes it thicker. Some types of honey crystallize faster than others due to different fructose & glucose ratios.
The honey will go hard and crystallize more during the cold months of the year.
To make crystallized honey liquid again, simply place the honey container in a pot of warm water. The gentle heat will melt the crystals and return the honey to its liquid form without damaging its quality.
