Ingredients:
1 1/4 cups spelt flour
1/4 cup cacao powder
1/2 Tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup coconut sugar, packed
1 large egg
1 large egg yolk
1 cup 70% Afrikoa chocolate broken into chunks
Preheat the oven to 180C and line a baking sheet with parchment paper.
In a medium bowl whisk together the flour, cacao, baking powder and salt.
In the bowl of an electric mixer, whisk together the butter and sugar until creamy. Add in the egg and egg yolk and whisk until combined.
Fold the dry ingredients into the wet ingredients just until just combined, then fold in the chocolate.
Scoop heaped tablespoons onto the baking sheet, well spaced - about 6 cookies at a time and bake for 10 minutes, until the edges are crisp and the centre is still slightly soft.
Top with a pinch of salt flakes and allow them to cool on the sheet before moving to a wire cooling rack.
