Carrot and Date Balls

A healthy lunchbox treat or in between meal snack.

Ingredients

Makes 25 balls

2 carrots, peeled and roughly chopped
1 cup dessicated coconut
2 cups dates, pitted
1 cup almonds
1 tsp cinnamon
1 tsp nutmeg
3 tbsp sesame seeds
3 tbsp olive oil
Sesame seeds, extra
Dessicated coconut, extra

 

 

Method
Place all the ingredients in a food processor, and blend to fine mixture.
Roll the mixture into bite sized balls.
Roll in a mix of the extra coconut and sesame seeds.
Allow to set in the fridge
