Bran Muffins - Recipe

Classic bran muffins are loaded with wholesome goodness. Perfect for a lunchbox treat making it an ideal work or school snack.

2 large eggs, lightly beaten
1 cup buttermilk
1/2 cup just melted butter
1/4 cup maple syrup
1/2 cup oat bran
1 1/2 cups molasses bran
1 cup whole wheat flour
1/4 cup coconut sugar
1 tsp baking soda
1 tsp baking powder
1 tsp sea salt

Preheat the oven to 190C and prepare a 12-cup muffin tin.
In a large bowl, whisk together the eggs, buttermilk, butter and maple syrup.
In a separate small bowl, whisk together the flour, oat bran, molasses bran, sugar, baking soda, baking powder, and salt. Sprinkle the dry ingredients over the top of the wet and stir until just combined. Don’t over mix.
Fill each muffin cup three-quarters full and bake for 20 to 25 minutes, until the edges of the muffins begin to brown and the tops have set. Allow to cool for 5 minutes in the pan before turning out onto a wire rack to cool completely.
