Beetroot Hummus

A delicious twist on regular hummus.

Ingredients:
3 medium beetroots, peeled and quartered

300g-400g cooked chickpeas or 
(1 can chickpeas, drained...)
100g Oh Mega peanut butter or tahini
Salt
Olive oil

Method:
In a processor, blend the beetroot,chickpeas and peanut butter to a paste. *if the beetroot is too hard, you may boil to soften*
Add enough olive oil to a make soft consistency.
The mixture will not be completely smooth.
Adjust seasoning and oil to desired taste.
Serve with seed crackers.
